This is a nice way to add a little flavour to quinoa. My family loves it!
2 cups water
1 cup quinoa
2 baby English cucumbers chopped
12 grape tomatoes cut in half
2 green onions chopped fine
1/4 cup kalamata olives sliced (I buy them without pits)
1/3 cup feta cheese
- Put water and quinoa into a medium saucepan and bring to a boil. Reduce heat, cover and simmer for about 15 minutes, stirring occasionally. Remove from heat when water is absorbed and let stand till cool.
- Mix cooled quinoa and all other ingredients together in a bowl.
- Serve and enjoy!
